<p>Each year, after the temperature drops below 14 Fahrenheit, Takasago builds an Ice Dome outside the main kura building. It is an igloo inside of which the temperature stays about 28 F, with 90% humidity and no wind The low temperature means &#8220;nasty bacteria&#8221; cannot survive, allowing them to make clean, pure, ultra-premium saké. Additionally, they separate the clear saké from the fermenting rice lees not by pressing, but rather by putting it into canvas bags and allowing the saké to drip out slowly overnight.</p>

<p>Although German Eisweins are produced from fruit that is actually picked frozen from the vine, we found that by freezing the grapes ourselves we could fashion a delicious dessert wine that is viscous and smooth, with excellent acidity to balance the sweetness.</p>
<p>The 2009 Scheurebe has delicate aromas of apricot, citrus blossom, honey, and crème caramel followed by a rich and unctuous texture integrated with well balanced, bright acidity and a persistent finish.</p>

<p>The color is a golden yellow with light reflections. On the nose it is pure and clean, the aroma of freshly-picked ripe apple with striking intensity. On the palate it&#8217;s a crisp, flavourful attack. A perfect balance of sugar and acidity. Perfect as an aperitif or to accompany sharp cheese (Cheddar or goat) or veined cheese (blue), and desserts. Serve chilled.<br />
