Pacific Rim 2007 Wallula Vineyard Biodynamic Riesling – White Wine
White Wine by Pacific Rim from Columbia Valley, Washington. Wallula is farmed according to the Biodynamic principles and is certified Biodynamic by Demeter USA. From its beginnings, Wallula vineyard was planted as a Biodynamic vineyard on virgin land without disturbing the native vegetation. Dan Nickolaus, the vineyard manager at Wallula, uses no pesticides and no herbicides and he is working to make this vineyard self sustainable. Dan uses all the Biodynamic preparations with an emphasis on horn manure, silica, stinging nettle and horsetail teas. Dan also makes his own compost and has a herd of sheep to control the weeds in the vineyard. 2007 was well suited for Biodynamic wines because the acidity in the grapes was high. The wine aromas are fairly ripe with some guava and grapefruit notes. The wine was aged on lees for a few months and displays wonderful yeastiness, jasmine on the palate and great minerality with a dry, bright finish.

Covey Run 2006 Reserve Semillon Ice Wine (375ML half-bottle) – Dessert Wine

Our Covey Run Semillon Ice wine shows intense aromas of ripe mango and pineapple, with floral notes of honeysuckle, and honey. These aromas are balanced with zippy acid (think lemon vanilla cream sandwich cookies) and a long, lingering finish. Imagine a cool, crisp winter night. Fresh snow is on the ground and the grapes are frozen on the vines. That’s when these grapes are harvested. Pressed while still frozen, the grapes grudgingly yield a rich, concentrated juice that is fermented both in-tank and in new barrels. Owen Roe 2008 Abbot’s Table – Red Wine
Red Wine by Owen Roe from Columbia Valley, Washington. Always a favorite! The 2008 Abbots Table is very reflective of the beautiful long growing season in Washington during 2008. With long warm days and cooler evenings, the fruit developed fabulous aromatics and deep rich flavors. The 2008 Abbot’s Table shows darker fruit notes than the previous two vintages. This very balanced and smooth Abbot’s Table has the signature velvety mouth feel with enough structure to support generous ripe flavors of sweet red and black fruit, plums, and dark cherries. Chateau Sainte Michelle 2005 Cold Creek Vineyard Chardonnay – White Wine
White Wine by Ch. Ste. Michelle from Columbia Valley, Washington. This Cold Creek Chardonnay shows off the power and depth that typifies the vineyard. Fruit flavors of baked apples and lemon meringue open this wine. A slightly higher percentage of new oak was used because it gives this wine nicely integrated smoke and toast flavors on the finish. Chateau Sainte Michelle 2007 Canoe Ridge Estate Vineyard Cabernet Sauvignon – Red Wine

Planted by vineyard manager Mimi Nye in 1991, our vineyard at Canoe Ridge Estate has grown before our eyes to produce more concentrated and opulent wines. This wine shows amazing intensity to go with ripe black cherry fruit. The Canoe Ridge Estate Cab is a beautifully balanced wine that is a classic expression of Washington fruit. FOOD PAIRING: venison, pork, beef.

Seven Hills 2004 Klipsun Vineyard Cabernet Sauvignon – Red Wine
Red Wine by Seven Hills from Columbia Valley, Washington. Sourced exclusively from Klipsun Vineyard in the highly-regarded Red Mountain AVA. As with all Seven Hills’ wines, grapes were hand-picked; harvest weather was very warm and yields were near average. Blended with 14% Merlot to lend softness. Bottled in July 2006, after cellaring in French barrels. Will benefit from medium to long-term aging, gaining additional integration and flavor development over three to six years. From one of America’s outstanding vineyards, this wine will be enjoyable for many years to come. This is a full-bodied Cabernet offering aromas of ripe blackberry, piquant spices, briar and hints of cherry liqueur. By mouth, there is abundant bright red and black fruits, fig and graham over moderate tannins, trailing into a warm, persistent finish. A ripe vintage of moderate acidity, complex flavors and a very ageable structure.
